This dense bean salad is fresh, punchy, and loaded with good things 🥗. Creamy beans, crisp vegetables, olives, and herbs make it colorful and satisfying, while a bright lemon-vinegar dressing brings everything to life.

Because if there’s one thing I learned from my nonna growing up in Italy, it’s that beans need acidity. She would dress them simply with good extra virgin olive oil and plenty of vinegar—and I loved them that way. So here we use both lemon juice and vinegar for that sharp, tangy kick that makes you want another bite 🍋.

Louise and I make this when we want something nutritious, fiber-rich, and filling without feeling heavy. It’s packed with beans and vegetables and fits naturally into the Mediterranean-style way of eating we grew up with.

And it’s wonderfully practical 🌿. Make a big bowl, keep it in the fridge, and lunch is basically handled for the next few days.

  • Chickpeas: creamy, hearty, and perfect for a filling three bean salad. Substitute navy beans or Great Northern beans.
  • Black beans: add an earthy flavor and color. Substitute pinto or kidney beans.
  • Cannellini beans: soft and creamy. Substitute butter beans or Great Northern beans.
  • Cherry tomatoes: juicy and sweet. Grape tomatoes or diced Roma tomatoes work well.

  • Lemon: both juice and zest add bright, fresh acidity.
  • Apple cider vinegar: gives the dressing its essential tang. Red wine or white wine vinegar works too.
  • Dried oregano: adds Mediterranean flavor. Italian seasoning also works.
  • Salt and black pepper: season to taste.
  • Honey: optional, for balancing the acidity. Maple syrup works too.
  • Dijon mustard: optional, for extra tang and a creamier dressing.

How to Make this Dense Bean Salad

Step 1. Make the dressing

In a large mixing bowl, whisk together the extra virgin olive oil, lemon juice, apple cider vinegar, oregano, salt, black pepper, honey, and Dijon mustard until well combined.

Step 2. Marinate the beans

Drain and rinse the chickpeas, black beans, and cannellini beans well.

Add them to the dressing and toss until coated. Let the beans marinate while you chop the vegetables so they have time to soak up the dressing.

Step 3. Add the vegetables and feta

Chop the cherry tomatoes, cucumber, bell pepper, scallions, and parsley and add them to the beans. Crumble in the feta.

Toss everything together until well coated in the dressing. Taste and adjust the salt, pepper, lemon, or vinegar if needed.

Serve immediately or refrigerate for later. This make-ahead bean salad gets even more flavorful as it sits.

  • 1 can black beans – 15 oz (400 g) or 1½ cups (230 g) cooked beans
  • 1 can cannellini beans – 15 oz (400 g) or 1½ cups (230 g) cooked beans
  • 2 cups cherry tomatoes halved or quartered
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 2 scallions scallions chopped
  • ½ cup flat leaf parsley chopped
  • 1 cup crumbled feta

For the Dressing

  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 2 teaspoons honey or maple syrup
  • 2 teaspoons mustard Dijon or yellow
  • 1 teaspoon dried oregano
  • ½ teaspoon salt or more to taste

Instructions

      I made this when it was posted in the past and it was absolutely delicious and filling. We even decided if we happen to want a little meat that night, we could add rotisserie chicken to it.
      I’ve never been a fan of bean salads in the past but something about this spoke to me. I would encourage everyone to give it a try! Easy, and can be a complete meal.
