For the Dressing

Make the dressing: In a large mixing bowl, whisk together 4 tablespoons extra virgin olive oil, 2 tablespoons apple cider vinegar, 2 tablespoons lemon juice, 2 teaspoons honey, 2 teaspoons mustard, 1 teaspoon dried oregano, ½ teaspoon salt, and ¼ teaspoon black pepper until well combined.
Marinate the beans: Drain and rinse 1 can chickpeas, 1 can black beans, and 1 can cannellini beans well. Add them to the dressing, toss to coat, and let them marinate while you chop the vegetables.
Finish the salad: Chop 2 cups cherry tomatoes, 1 cup cucumber, 1 cup bell pepper, 2 scallions scallions, and ½ cup flat leaf parsley. Add them to the bowl with 1 cup crumbled feta.Toss gently until everything is coated. Taste and adjust with more salt, pepper, lemon juice, or vinegar if needed. Serve right away or refrigerate for later.
