How to Make our Greek Chickpea Salad
Step 1. Make the dressing
In a medium bowl, whisk together the extra virgin olive oil, red wine vinegar, mustard, honey, dried oregano, salt, and black pepper until smooth and well combined.

Step 2. Marinate the chickpeas
Drain and rinse the chickpeas, then add them to the dressing.
Toss well and let them marinate for 5 to 10 minutes while you prepare the vegetables. This gives the chickpeas time to soak up the dressing and become more flavorful.

Step 3. Add the vegetables
Halve the cherry tomatoes, dice the cucumber, slice the green bell pepper, thinly slice the red onion, and prepare the Kalamata olives.
Add the vegetables to a large mixing bowl. Pour in the chickpeas and all their dressing, then toss until everything is well coated.

Step 4. Add the feta and serve
Crumble in the feta cheese and give the salad a gentle final toss.
