Why you’ll love our Tandoori Cauliflower Bowl!
This Tandoori Cauliflower Bowl has everything we want in an easy dinner: warmly spiced roasted cauliflower, crispy-edged chickpeas, fluffy basmati rice, and a big spoonful of cool, creamy yogurt. ๐ฟ Itโs colorful, nourishing, and seriously delicious.
The magic is in the Greek yogurt tandoori marinade. It clings to every nook and cranny of the cauliflower, then roasts into an incredibly flavorful coating with garlic, ginger, garam masala, paprika, and warm spices. ๐ฅ Louise and I could not stop picking those golden, charred florets straight from the pan.
Add chickpeas for fiber and plant-based protein, then toss the warm rice right onto the sheet pan so it catches all those roasted spices and tasty browned bits.
And donโt skip the creamy finish! Raita or Greek yogurt brings the whole bowl together, adding freshness and moisture to every bite.

Ingredients
Full ingredients and substitutions are in the recipe box below.

- Basmati rice: fluffy and aromatic and perfect for these bowls. Substitute jasmine rice, brown rice, quinoa, couscous, bulgur, or farro.
- Chickpeas: add satisfying texture, fiber, and plant-based protein. Substitute a 16-ounce block of extra-firm tofu, cut into bite-size cubes and tossed in the marinade with the cauliflower. White beans, lentils, or edamame also work.
- Cauliflower: its nooks and crannies hold the tandoori yogurt marinade beautifully. Broccoli works too, but roasts faster.
- Greek yogurt: creates a thick marinade that clings to the cauliflower. Substitute low-fat Greek yogurt or Skyr for even more protein, or use a thick dairy-free yogurt.
- Olive oil: helps everything brown and adds richness. Avocado oil works well too.
- Garlic: adds savory depth. If garlic intolerant, simply omit it or use finely chopped chives for a gentler flavor.
- Fresh ginger: adds warmth and freshness. Ground ginger works in a pinch.
- Ground coriander, cumin, and turmeric: build the warm, earthy spice base.
- Garam masala: gives our spiced cauliflower bowl its signature aromatic flavor. Curry powder works in a pinch, although the flavor will differ.
- Sweet paprika: adds color and mild sweetness. Substitute smoked paprika for a smokier flavor.
- Red pepper flakes and black pepper: add gentle heat. Adjust to taste.
- Salt: brings the spices alive. Taste and adjust generously before serving.
- Cilantro: adds freshness. Substitute parsley or mint.
- Lemon: squeeze it over everything after roasting for maximum freshness and aroma. Lime works too.

How to Make Tandoori Cauliflower Bowls
1. Coat the cauliflower
Preheat the oven to 425ยฐF (220ยฐC).
In a large bowl, mix the Greek yogurt, olive oil, grated garlic and ginger, coriander, garam masala, paprika, cumin, turmeric, red pepper flakes, black pepper, and salt.
Add the cauliflower florets and toss well until completely coated in the yogurt and spices.
Spread the cauliflower in a single layer on a large sheet pan.

2. Add the chickpeas and roast
Toss the drained chickpeas with a little olive oil and salt, then scatter them around the cauliflower.
Roast for 25 to 30 minutes, until the cauliflower is fork-tender and the yogurt coating is golden and lightly charred around the edges.

3. Cook the basmati rice
While the cauliflower roasts, bring a medium pot of lightly salted water to a boil. Use plenty of water, about 4 cups for 1 cup of dry rice.
Add the basmati rice and simmer gently for about 10 minutes, or until tender with a slight bite.
Drain well in a fine-mesh strainer. Thatโs it! Thereโs no need to measure an exact rice-to-water ratio or let the rice steam.
This simple method makes fluffy rice while the sheet pan cauliflower finishes roasting.

4. Toss and serve
Add the warm rice directly to the sheet pan with the roasted cauliflower and chickpeas.
Add the cilantro, a generous squeeze of fresh lemon juice, and an optional drizzle of olive oil.
Toss well, scraping up the browned yogurt and spices from the pan so all that flavor coats the rice. Taste and adjust with more lemon juice and salt as needed.
Divide into bowls and serve warm with plenty of raita or Greek yogurt. The creamy topping is important here: it makes every bite creamy, fresh, and satisfying.
Finish your cauliflower rice bowl with extra cilantro and lemon wedges.

Serving Suggestions
- Add more protein: Serve with baked or pan-seared salmon, shredded cooked chicken, or rotisserie chicken for an easy, protein-rich dinner.
- Donโt skip the creamy topping: Raita or Greek yogurt adds moisture and freshness and balances the warm spices.
- Make it meal-prep friendly: Portion the rice, cauliflower, and chickpeas into containers. Keep the raita separate and add it after reheating.
- Serve it family-style: Bring the sheet pan to the table with raita, extra cilantro, lemon wedges, and Greek yogurt so everyone can build their own bowl.
- Make it a lighter meal: Skip the rice and serve the tandoori cauliflower and chickpeas over leafy greens with plenty of raita and fresh lemon.
Tips
- Use thick Greek yogurt: It clings to the cauliflower instead of running onto the sheet pan, giving you a flavorful coating that browns beautifully.
- Coat every floret well: Toss thoroughly so the yogurt marinade gets into all the little nooks and crannies.
- Cut the cauliflower evenly: Similar-size florets roast at the same rate, so you get tender centers without burning the smaller pieces.
- Give everything some room: Spread the cauliflower and chickpeas in a single layer. An overcrowded pan traps steam and reduces browning.
- Use tenderness as your timer: Ovens and cauliflower heads vary. The cauliflower is ready when a fork slides into the thicker stems easily and the edges are nicely browned.
- Season to taste: Cauliflower, chickpeas, and rice can take plenty of seasoning. Taste after tossing everything together and add salt until the flavors really pop.
- Add the lemon at the end: Fresh lemon juice after roasting gives you brighter flavor and aroma than adding it to the marinade.
- Toss the rice right on the pan: Scrape up those browned yogurt, spice, and cauliflower bits as you toss. They add loads of flavor to the rice.
- Add moisture before serving: Once the rice goes in, the bowl needs something creamy or juicy. Serve generously with raita or Greek yogurt, or add an extra drizzle of olive oil and lemon juice.
- Storage: Refrigerate leftovers in an airtight container and keep the raita or Greek yogurt separate. Add the creamy topping after reheating.

Frequently Asked Questions
Yes. Use a thick, unsweetened dairy-free yogurt. Avoid thin yogurt, as the marinade needs to cling to the cauliflower while it roasts.
Absolutely. Add diced extra-firm tofu for an easy plant-based option. You can toss it right in the tandoori marinade with the cauliflower; if adding a full block, make a little extra marinade so thereโs enough to coat everything well.
Tofu adds more protein than chickpeas and tastes great with the warm spices and creamy raita.
You can also serve the bowl with salmon, shredded cooked chicken, or rotisserie chicken for extra protein.
Yes. Try brown rice, quinoa, farro, or couscous. You can also skip the grain and serve the vegetarian tandoori bowl over leafy greens.
The sheet pan may be overcrowded, or your cauliflower may contain extra moisture. Spread everything in a single layer with some space between the florets. You can also broil it for 2 to 3 minutes at the end for extra char.
It’s gently spiced rather than hot. The paprika adds color without much heat, while the red pepper flakes provide a mild kick. Add more or less to suit your taste.
Store leftovers in an airtight container in the refrigerator for 3 to 4 days, preferably keeping the raita or Greek yogurt separate.
Reheat the cauliflower, chickpeas, and rice, then add the cold raita, fresh lemon, and cilantro before serving.
You can also freeze the cauliflower, chickpeas, and rice, but don’t freeze the raita or Greek yogurt. Thaw overnight in the refrigerator and reheat until hot.
