How to Make Roasted Eggplant Orzo
1. Roast the vegetables
Preheat the oven to 425ยฐF (220ยฐC).
Add the eggplant, cherry tomatoes, and chickpeas to a large sheet pan. Drizzle with olive oil, then season with smoked paprika, salt, and black pepper.
Toss well and spread everything into a mostly single layer.
Roast for about 30 minutes, until the eggplant is tender and lightly charred and the tomatoes are soft and jammy.

2. Make the dressing and cook the orzo
While the vegetables roast, whisk together the olive oil, red wine vinegar, honey, oregano, grated garlic, salt, and black pepper.
When the vegetables are almost ready, cook the orzo in a pot of salted boiling water until al dente.
Reserve a little pasta water, then drain without rinsing.

3. Toss everything together
Take the sheet pan out of the oven and add the hot orzo right away.
Add the feta, fresh basil or parsley, and the dressing.
Toss everything really well, scraping up all the roasted juices and browned bits from the pan. This is what gives the roasted vegetable orzo so much flavor.
If it looks a little dry, add a splash of reserved pasta water.

4. Taste and serve
Taste and adjust the salt, pepper, or vinegar if needed.
