  • Basmati rice: fluffy and aromatic and perfect for these bowls. Substitute jasmine rice, brown rice, quinoa, couscous, bulgur, or farro.
  • Chickpeas: add satisfying texture, fiber, and plant-based protein. Substitute a 16-ounce block of extra-firm tofu, cut into bite-size cubes and tossed in the marinade with the cauliflower. White beans, lentils, or edamame also work.
  • Cauliflower: its nooks and crannies hold the tandoori yogurt marinade beautifully. Broccoli works too, but roasts faster.
  • Greek yogurt: creates a thick marinade that clings to the cauliflower. Substitute low-fat Greek yogurt or Skyr for even more protein, or use a thick dairy-free yogurt.
  • Olive oil: helps everything brown and adds richness. Avocado oil works well too.
  • Garlic: adds savory depth. If garlic intolerant, simply omit it or use finely chopped chives for a gentler flavor.
  • Fresh ginger: adds warmth and freshness. Ground ginger works in a pinch.
  • Ground coriander, cumin, and turmeric: build the warm, earthy spice base.
  • Garam masala: gives our spiced cauliflower bowl its signature aromatic flavor. Curry powder works in a pinch, although the flavor will differ.
  • Sweet paprika: adds color and mild sweetness. Substitute smoked paprika for a smokier flavor.
  • Red pepper flakes and black pepper: add gentle heat. Adjust to taste.
  • Salt: brings the spices alive. Taste and adjust generously before serving.
  • Cilantro: adds freshness. Substitute parsley or mint.
  • Lemon: squeeze it over everything after roasting for maximum freshness and aroma. Lime works too.

How to Make Tandoori Cauliflower Bowls

1. Coat the cauliflower

Preheat the oven to 425ยฐF (220ยฐC).

In a large bowl, mix the Greek yogurt, olive oil, grated garlic and ginger, coriander, garam masala, paprika, cumin, turmeric, red pepper flakes, black pepper, and salt.

Add the cauliflower florets and toss well until completely coated in the yogurt and spices.

Spread the cauliflower in a single layer on a large sheet pan.

2. Add the chickpeas and roast

Toss the drained chickpeas with a little olive oil and salt, then scatter them around the cauliflower.

Roast for 25 to 30 minutes, until the cauliflower is fork-tender and the yogurt coating is golden and lightly charred around the edges.

3. Cook the basmati rice

While the cauliflower roasts, bring a medium pot of lightly salted water to a boil. Use plenty of water, about 4 cups for 1 cup of dry rice.

Add the basmati rice and simmer gently for about 10 minutes, or until tender with a slight bite.

Drain well in a fine-mesh strainer. Thatโ€™s it! Thereโ€™s no need to measure an exact rice-to-water ratio or let the rice steam.

This simple method makes fluffy rice while the sheet pan cauliflower finishes roasting.

4. Toss and serve

Add the warm rice directly to the sheet pan with the roasted cauliflower and chickpeas.

Add the cilantro, a generous squeeze of fresh lemon juice, and an optional drizzle of olive oil.

Toss well, scraping up the browned yogurt and spices from the pan so all that flavor coats the rice. Taste and adjust with more lemon juice and salt as needed.

Divide into bowls and serve warm with plenty of raita or Greek yogurt. The creamy topping is important here: it makes every bite creamy, fresh, and satisfying.

Can I make tandoori cauliflower without Greek yogurt?

Yes. Use a thick, unsweetened dairy-free yogurt. Avoid thin yogurt, as the marinade needs to cling to the cauliflower while it roasts.

Can I make it more protein-rich?

Absolutely. Add diced extra-firm tofu for an easy plant-based option. You can toss it right in the tandoori marinade with the cauliflower; if adding a full block, make a little extra marinade so thereโ€™s enough to coat everything well.

Tofu adds more protein than chickpeas and tastes great with the warm spices and creamy raita.

You can also serve the bowl with salmon, shredded cooked chicken, or rotisserie chicken for extra protein.

Can I use a different grain?

Why isn’t my cauliflower browning?

The sheet pan may be overcrowded, or your cauliflower may contain extra moisture. Spread everything in a single layer with some space between the florets. You can also broil it for 2 to 3 minutes at the end for extra char.

Is this recipe spicy?

It’s gently spiced rather than hot. The paprika adds color without much heat, while the red pepper flakes provide a mild kick. Add more or less to suit your taste.

How to store this Tandoori Cauliflower Bowl?

Store leftovers in an airtight container in the refrigerator for 3 to 4 days, preferably keeping the raita or Greek yogurt separate.

Reheat the cauliflower, chickpeas, and rice, then add the cold raita, fresh lemon, and cilantro before serving.

You can also freeze the cauliflower, chickpeas, and rice, but don’t freeze the raita or Greek yogurt. Thaw overnight in the refrigerator and reheat until hot.

  • 1 cup basmati rice uncooked, or 3 cups (600 g) cooked
  • 1 can chickpeas 15 oz / 400 g can โ€“ drained and rinsed
  • 1 large cauliflower about 2 pounds / 900 g โ€“ cut into florets
  • ยพ cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 cloves garlic grated
  • 1 tablespoon fresh ginger grated
  • 1ยฝ teaspoons ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon sweet paprika
  • ยฝ teaspoon ground cumin
  • ยฝ teaspoon turmeric
  • ยผ teaspoon red pepper flakes
