How to Make Baked Apple Oatmeal Cups

Step 1. Mix the wet ingredients

Preheat the oven to 375ยฐF (190ยฐC) and lightly grease a 12-cup muffin pan.

In a large bowl, whisk together the applesauce, Greek yogurt, honey, egg, and vanilla until smooth and creamy.

Yes. Quick oats will work, but the cups will have a softer, less chewy texture. Rolled oats give you the best structure.

Do I need to peel the apples?

No. You can leave the peel on for extra texture and fiber. If you prefer softer apple pieces, peel them first.

    These are easy to make and delightful to eat! I made some substitutions: mashed banana instead of honey (used maple syrup), 3 pitted Medjool dates (no raisins in this house due to my 4-legged fur baby), Bulgarian yoghurt (since I buy it by the gallon).
