Why you’ll love our Apple Chickpea Salad!
This apple chickpea salad has it all: creamy, crunchy, sweet, salty, tangy, and seriously satisfying. 🍎 Chickpeas bring plant-based protein and plenty of fiber, while crisp apples and juicy grapes make every bite fresh and delicious.
But the real star is the dressing. We use mostly Greek yogurt with just a little mayo, and honestly, it’s a game changer. 🥣 It’s creamy and luscious, but also fresher, lighter, protein-rich, and naturally lower in saturated fat than a mayo-heavy dressing.
Louise and I love the contrast here: crisp fruit, crunchy celery and nuts, creamy chickpeas, and that cool, tangy dressing. There’s so much texture and flavor in every forkful.
It’s the kind of nutritious fall and winter salad you actually look forward to eating. 🥗 Easy enough for lunch, satisfying enough for dinner, and a seriously delicious way to eat more legumes.

Ingredients
Full ingredients and substitutions are in the recipe box below.

- Chickpeas: canned chickpeas keep this chickpea apple salad quick and easy. Substitute home-cooked chickpeas, cannellini beans, or butter beans.
- Apples: choose crisp, sweet-tart apples like Honeycrisp, Pink Lady, Fuji, or Granny Smith. Pears are a delicious fall alternative.
- Grapes: add juicy sweetness that contrasts beautifully with the creamy dressing. Use red or green seedless grapes, or substitute dried cranberries for a chewier bite.
- Celery: adds essential fresh crunch. Substitute finely chopped fennel for a slightly sweeter, aromatic flavor.
- Pecans: bring richness and crunch. Substitute walnuts, almonds, sunflower seeds, or pumpkin seeds.
- Greek yogurt: makes the dressing creamy, tangy, and protein-rich. Use low-fat Greek yogurt or Skyr for even more protein; dairy-free yogurt also works.
- Mayonnaise: just a little adds richness and rounds out the yogurt. Use vegan mayo if preferred.
- Dijon mustard: gives the creamy chickpea salad a savory, tangy kick. Yellow or whole-grain mustard works too.
- Honey: balances the tanginess with gentle sweetness. Substitute maple syrup, agave syrup, or sugar.
- Lemon juice: brightens the dressing and fruit. Apple cider vinegar is a good alternative.
- Salt and black pepper: bring all the sweet, savory, and tangy flavors together.

How to Make Apple Chickpea Salad
Step 1. Make the creamy dressing
In a small bowl, whisk the Greek yogurt, mayonnaise, Dijon mustard, honey, apple cider vinegar, salt, and black pepper until smooth and creamy.

Step 2. Prep the apples and mix-ins
Cut the Honeycrisp apples into small bite-size pieces and add them to a large mixing bowl. Toss immediately with the lemon juice to help prevent browning.
Thinly slice the celery, halve the seedless grapes, drain and rinse the chickpeas, and roughly chop the pecans.
Add everything to the bowl with the dried cranberries and toss gently to combine.

Step 3. Toss, chill, and serve
Pour the creamy Greek yogurt dressing over the salad and toss gently until everything is evenly coated.
Cover and refrigerate for 30 minutes. This gives the flavors time to come together and makes the salad extra refreshing. Taste and adjust seasoning.
Serve cold as a light lunch or satisfying side dish.

Serving Suggestions
- Pair it with soup: Serve a smaller portion alongside our roasted tomato soup, butternut squash soup, or a simple vegetable soup for a cozy meal.
- Make it a protein-rich lunch: Serve a generous portion on its own, or add hard-boiled eggs, grilled chicken, or baked tofu.
- Turn it into a sandwich: Spoon it into whole-grain bread, a croissant, pita, or wrap with crisp lettuce for an easy lunch.
- Serve it over greens: Add it to a bed of romaine, spinach, or mixed greens for a fresh, satisfying salad bowl.
- Bring it to a potluck: The sweet-savory flavors make it a great fall and winter option for Thanksgiving, holiday gatherings, or casual get-togethers.
- Make it ahead for lunch: Prepare it in advance and keep it chilled for an easy grab-and-go lunch or meal-prep option.
Tips
- Choose crisp apples: Honeycrisp, Pink Lady, Fuji, or Granny Smith hold their shape and give the salad that essential fresh crunch.
- Toss the apples with lemon right away: This helps slow browning and keeps them looking fresh while you prepare everything else.
- Drain and dry the chickpeas well: Excess water can thin the creamy dressing and keep it from coating the ingredients properly.
- Halve the grapes: They’re easier to eat and their sweetness gets distributed throughout the salad instead of having whole grapes dominate a bite.
- Toast the pecans for extra flavor: A few minutes in a dry skillet makes them nuttier and crunchier. Let them cool before adding them.
- Keep everything bite-size: Dice the apples, thinly slice the celery, halve the grapes, and roughly chop the pecans so you get a little of everything on each forkful.
- Give it 30 minutes in the fridge: A short chill lets the flavors come together while keeping the apples, grapes, and celery crisp.
- Don’t make it too far ahead: The salad keeps well, but the fruit and nuts have their best texture when freshly prepared or within the first day or so.

Frequently Asked Questions
Yes. You can make it several hours ahead and refrigerate it until serving. For the best crunch, add the pecans shortly before serving.
Yes. You can replace the mayo with additional Greek yogurt. The dressing will taste slightly tangier and less rich but will still be creamy.
Yes. You can leave out the grapes and add more dried cranberries, raisins, or chopped dates. The result will be sweeter and less juicy.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Give the salad a quick stir before serving, as the dressing can settle slightly.
Freezing is not recommended because the apples, grapes, celery, and Greek yogurt dressing can lose their texture after thawing.
