How to Make Apple Chickpea Salad
Step 1. Make the creamy dressing

Step 2. Prep the apples and mix-ins
Cut the Honeycrisp apples into small bite-size pieces and add them to a large mixing bowl. Toss immediately with the lemon juice to help prevent browning.
Thinly slice the celery, halve the seedless grapes, drain and rinse the chickpeas, and roughly chop the pecans.
Add everything to the bowl with the dried cranberries and toss gently to combine.

Step 3. Toss, chill, and serve
Pour the creamy Greek yogurt dressing over the salad and toss gently until everything is evenly coated.

For the Dressing
- ¾ cup Greek yogurt
- 1 – 2 tablespoons mayonnaise sub vegan mayo or more Greek yogurt
- 1 tablespoon Dijon mustard or yellow mustard
- 1 tablespoon honey or maple syrup
- 1 tablespoon apple cider vinegar
- ½ teaspoon salt or to taste + black pepper

I never would have thought to put chickpeas and fruit in a salad, but this was wonderful! I used fresh Honeycrisp apples since they’ve just come into season here, a combo of red and green grapes, pecans, and unsweetened dried cranberries. For the dressing, I just combined no sugar, no fat lemon yogurt with lemon juice. The creaminess of the garbanzos really helped to balance out the sweet and tangy from the fruits. I think next time I will add a second can of chickpeas. Thanks for the delicious recipe!

Yes, my dressing was just fat free no sugar lemon yogurt thinned out with a little lemon juice. I use that combo in lots of salads.

I was hesitant – a sweet creamy chickpea salad??? Well call me a convert! I didn’t have any grapes but it didn’t matter – so tasty. It was the perfect side with your barbecue tofu, which I eat on a bun like a burger. Leftover salad will be my lunch tomorrow. Another winning PBS recipe!

I am intrigued by the whole recipe, but what I really needed was salad dressing for a big lettuce salad that I made yesterday. I’m in Northern Michigan, United States and had unsweetened plant-based almond yogurt and all the rest of the dressing ingredients except the mayonnaise. This is a good thing because mayonnaise is not exactly health food, and I can’t believe how delicious this dressing is sans mayonnaise. Since it’s healthy, I feel like I can really slather it on my salad. When I try the whole salad, I think I will use minimal lemon juice (juice of a whole lemon) because it seems it would be too tangy for me. I’ve pinned a number of your recipes, it’s nice to have finally actually tried one.
I made this and used dried apricots and dried cherries which I has on hand. Delicious. I’m sure this will taste even better once its had a chill in the fridge.
