How to Make Cowboy Bean Soup

1. Cook the vegetables

Heat the olive oil in a large pot over medium heat.

Add the chopped onion, diced red bell pepper, and chopped carrots. Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.

3. Add the beans and simmer

Stir in the crushed tomatoes, vegetable broth, drained and rinsed black beans, kidney beans, pinto beans, and diced potatoes.
