How to Make Roasted Tomato Soup

Step 1. Roast the tomatoes

Preheat the oven to 425ยฐF (220ยฐC).

Cut the cherry tomatoes in half and place them cut side up on a large baking sheet. Cut the onion into thin wedges and scatter them around the tomatoes.

Add the unpeeled garlic cloves. Drizzle everything with olive oil, then sprinkle with oregano, salt, and black pepper.

Spread the vegetables into a single layer. Roast for 30 to 40 minutes, or until the tomatoes are very soft, juicy, and lightly blistered and the onion is caramelized.

This roasting method gives the sheet pan tomato soup a deep, rich flavor without needing to sautรฉ anything first.

Step 2. Blend the soup

Transfer the roasted tomatoes, onion, and all the juices from the baking sheet to a Dutch oven.

Squeeze the roasted garlic cloves out of their skins into the pot. Add the drained cannellini beans and 1 cup (240 ml) of the vegetable broth.

Blend until completely smooth and creamy. If needed, add more broth, a little at a time, until the soup reaches your preferred consistency.

You can use an immersion blender or transfer the soup to a standing blender, blending in batches if needed.
