Why you’ll love this Mexican Quinoa Salad!
This Mexican quinoa salad is BIG on flavor! Smoky roasted sweet potatoes, black beans, crunchy peppers, sweet corn, spicy jalapeรฑos, and fluffy quinoa, all tossed in a punchy cilantro-lime dressing. ๐ฝ Itโs not a traditional Mexican recipe, but my own creation inspired by Mexican flavors and ingredients.
Itโs fresh and colorful, but still hearty enough to call dinner. Louise and I love the contrast here: warm, caramelized sweet potatoes against crisp vegetables, with that tangy-sweet lime dressing soaking into every bite.
And yes, it happens to be pretty darn nutritious too. ๐ฑ Youโve got fiber-rich beans, protein-rich quinoa, plenty of vegetables, and wholesome everyday ingredients that make this a feel-good meal without sacrificing flavor.
Make a big bowl for dinner, pack the leftovers for lunch, or meal prep it for the week. Just save a little extra dressing, those sweet potatoes soak it up like sponges, and an extra drizzle brings everything right back to life. ๐ฅ

Ingredients
Full ingredients and substitutions are in the recipe box below.

- Sweet potatoes: roast until tender and caramelized for sweet, smoky flavor. Substitute butternut squash, pumpkin, or regular potatoes.
- Smoked paprika: adds deep smokiness to the roasted vegetables. Substitute regular paprika or chipotle powder for extra heat.
- Ground cumin: brings warm, earthy flavor. Substitute chili powder or ground coriander.
- Quinoa: makes a fluffy, satisfying base. For convenience, use pre-cooked quinoa pouches like we do, or cook quinoa from scratch. White, red, or tri-color quinoa all work well. Substitute brown rice, farro, or couscous.
- Black beans: add hearty texture and plant-based protein. Use canned black beans for convenience, or cook dried black beans from scratch. Substitute pinto beans, kidney beans, or chickpeas.
- Red bell pepper: adds juicy crunch and sweetness. Substitute yellow, orange bell pepper, or cherry tomatoes.
- Corn: canned, fresh, or frozen all work in this black bean quinoa salad. For extra flavor, use grilled or fire-roasted corn.
- Red onion: adds sharpness and crunch. Substitute green onions or shallots.
- Jalapeรฑos: use pickled for tang or fresh for more heat. Substitute serrano peppers or mild green chiles.
- Cilantro: makes the dressing bright and fresh. Substitute flat-leaf parsley if cilantro isnโt your thing.
- Extra virgin olive oil: creates a rich, smooth dressing.
- Lime juice: gives this quinoa sweet potato salad its fresh, tangy kick. Lemon works too.
- Maple syrup: balances the lime and heat. Substitute honey or agave.
- Garlic: adds savory bite. If garlic intolerant, simply omit it or use garlic-infused olive oil.
- Fresh ginger: adds zing and warmth. Substitute a small pinch of ground ginger.
- Salt and black pepper: bring all the flavors together.

How to Make Mexican Quinoa Salad
1. Roast the sweet potatoes
Preheat the oven to 400ยฐF (200ยฐC).
Peel and cut the sweet potatoes into 1-inch (2.5 cm) chunks. Toss with a drizzle of olive oil, smoked paprika, cumin, a good pinch of salt, and black pepper.
Spread in a single layer and roast for about 20 minutes, or until fork-tender and lightly browned.
For the air fryer, cook at 350ยฐF (180ยฐC) for 12 to 15 minutes, shaking once or twice.
If your quinoa isnโt cooked yet, prepare it now according to the package directions.

2. Make the dressing
Finely chop the cilantro and add it to a small bowl.
Add the olive oil, lime juice, maple syrup, grated garlic and ginger, salt, and black pepper. Whisk well until combined.
Alternatively, add everything to a small blender and blend until smooth.

3. Marinate the black beans
Drain and rinse the black beans, shaking off as much water as possible.
Add them straight to the dressing and toss well.
Set aside while you prep the remaining ingredients. This quick marinade gives the beans so much more flavor and makes a big difference in this quinoa and black bean salad.

4. Toss everything together
Chop the bell pepper and red onion, drain the corn, and prepare the jalapeรฑos.
Add them to a large bowl with the cooked quinoa and roasted sweet potatoes. The sweet potatoes can still be warm.
Add the black beans and all their dressing, then toss gently until everything is evenly coated.
Taste and adjust with more salt or lime juice before serving.
For quinoa salad meal prep, make a little extra dressing to drizzle over later. The sweet potatoes soak it up like sponges as they sit.

Serving Suggestions
- Make it a high-protein lunch: Add grilled tofu, tempeh, a couple of hard-boiled eggs, or shredded rotisserie chicken.
- Build a burrito bowl: Serve with avocado, shredded lettuce, salsa, tortilla chips, and a spoonful of Greek yogurt or sour cream.
- Bring it to a potluck: It travels well, looks colorful on the table, and is delicious at room temperature. Make a little extra dressing to toss through just before serving, as the quinoa and sweet potatoes soak it up as they sit.
- Meal prep for the week: Portion into containers and keep extra cilantro-lime dressing on the side for a fresh drizzle before eating.
- Serve it as a hearty side: Pair with veggie burgers, grilled vegetables, corn on the cob, or your favorite cookout mains.
- Stuff it into wraps: Add avocado and greens, then roll everything into a large flour tortilla for an easy grab-and-go lunch.
Tips
- Cut the sweet potatoes evenly: Keep the chunks about the same size so they roast at the same rate without some turning mushy.
- Donโt overcook the sweet potatoes: Roast just until fork-tender and lightly caramelized so they hold their shape when tossed.
- Drain the black beans really well: Extra water dilutes the dressing and can make the salad watery.
- Marinate the beans: Toss the black beans with the dressing while you prep everything else. Theyโll soak up much more flavor.
- Warm sweet potatoes are fine: You donโt need to cool them completely. Slightly warm potatoes taste great here and absorb the dressing beautifully.
- Adjust the heat to your crowd: Pickled jalapeรฑos are tangy and easy to control; fresh jalapeรฑos give you a sharper kick. Use less or leave them out for a mild salad.
- Taste after tossing: Quinoa, beans, and especially sweet potatoes absorb plenty of seasoning, so check the salt and lime once everything is combined.
- Make extra dressing for meal prep: The quinoa and sweet potatoes soak it up as they sit. Save some dressing for a fresh drizzle before serving leftovers.
- Prep ahead strategically: Cook the quinoa, roast the sweet potatoes, and make the dressing ahead, then assemble when convenient.

Very good! I love smoky heat with sweet potatoes so I added about 2T chipotles.
OUTSTANDING! My 11 year old son and I (both vegetarians) have been taking this for lunch since we went back to school (I’m a teacher). We both love it! You can really make it your own by adjusting the sweetness and spiciness. You can eat it warm, cold or room temp. I feel like it hits all the notes & leaves me feeling satisfied.
Hi Annie, I’m so happy to hear you guys both liked it! ๐
Cheers,
