Ingredients

Full ingredients and substitutions are in the recipe box below.

Ingredients for smoky Mexican inspired black bean stew.
  • Extra virgin olive oil: Builds a flavorful base. Substitute avocado oil or another vegetable oil.
  • Onion: Yellow or white onion adds sweetness. Shallots work too.
  • Garlic: Freshly grated is best. For garlic intolerance, use garlic-infused olive oil or extra herbs.
  • Tomato paste: Adds concentrated tomato flavor, richness, and depth. If you don’t have it, simply omit it. The canned tomatoes already provide plenty of flavor.
  • Red pepper flakes: Our pantry-friendly alternative to the dried Mexican chilies traditionally used in birria. Classic birria often combines guajillo chilies for fruity, tangy flavor, ancho chilies for mild, earthy sweetness, and sometimes chiles de รกrbol for heat. For a more traditional flavor, use 1โ€“2 dried ancho or guajillo chilies, soaked in hot water until soft, then blended into the sauce. Alternatively, try mild chili powder, chipotle powder for smokiness, or cayenne for extra heat. Start mild and adjust to taste.
  • Smoked paprika: Gives the stew its signature smoky flavor. Regular paprika works but is less smoky. Chipotle powder is another great option, but use less and adjust to taste since it’s spicy.
  • Ground cumin: Adds earthy warmth. Substitute ground coriander for a slightly different flavor.
  • Dried oregano: Mexican oregano is excellent, but regular oregano or Italian seasoning works.
  • Ground cinnamon: Adds subtle warmth. A pinch of allspice works too.
  • Crushed tomatoes: Create a rich sauce. Substitute canned diced tomatoes or passata.
  • Vegetable broth: Adds savory depth. Substitute chicken broth, beef broth, or water with extra seasoning.
  • Black beans: Canned beans make this easy black bean dinner quick and affordable. Cooked dried beans work too.
  • Lime: Brightens the smoky black bean sauce. Substitute apple cider vinegar.
  • Rice: White or brown rice both work beautifully to soak up the smoky sauce. Substitute quinoa, couscous, or cauliflower rice, or serve with warm tortillas, crusty bread, or cornbread for dipping. You can even spoon the stew over baked potatoes or sweet potatoes.
  • Feta: Adds a salty, creamy finish. Substitute queso fresco or a dairy-free alternative.
  • Optional toppings: Cilantro, red onion, and avocado add freshness and texture.

How to make Smoky Black Bean Stew

Step 1. Sautรฉ the aromatics

Heat 2 tablespoons extra virgin olive oil in a large pot over medium heat. Add 1 large finely chopped onion and cook for about 5 minutes, until softened.

Stir in 3 grated garlic cloves, 2 tablespoons tomato paste, 2 teaspoons smoked paprika, 1 teaspoon ground cumin, 1 teaspoon dried oregano, ยผ teaspoon red pepper flakes, and ยผ teaspoon ground cinnamon.

Cook for 1 minute, stirring often, until fragrant.

Step 1 Chopped onion, garlic, tomato paste, and spices sauteฬing in olive oil.

Step 2. Blend the sauce

Add 1 can (15 oz / 400 g) crushed tomatoes, 1 cup vegetable broth, and ยฝ can drained and rinsed black beans.

Blend directly in the pot with an immersion blender until smooth, thick, and creamy.

No immersion blender? Carefully transfer the mixture to a standing blender and blend until smooth, or skip blending for a chunkier stew.

Step 2 Immersion blender combining tomatoes, broth, and black beans into smooth sauce.

Step 3. Simmer the black beans

Stir in the remaining 2ยฝ cans drained and rinsed black beans, 1 teaspoon salt, and a few twists of black pepper.

Cover with the lid slightly ajar and simmer gently for 10 minutes, stirring occasionally.

The beans should be tender and coated in a rich, velvety Mexican-inspired sauce.

Add more vegetable broth, up to 1 additional cup, until you reach your preferred consistency.

Turn the heat off and squeeze in the juice of 1 lime, then taste and adjust the salt and heat to your liking.

Step 3 Whole black beans simmering in thick, glossy, reddish-brown sauce.

Step 4. Serve and enjoy

Serve in bowls with rice, then finish with crumbled feta or queso fresco, finely diced red onion, fresh cilantro, and lime wedges.

Add sliced avocado if you like.

The fluffy rice soaks up the flavorful sauce, making this creamy black bean dinner especially satisfying.

Step 4 Black bean stew over rice topped with onion, and cilantro.

Serving Suggestions

  • Make it a complete meal: Serve over fluffy white or brown rice with crumbled feta or queso fresco, avocado, cilantro, and a generous squeeze of lime.
  • Add more protein: Stir in shredded rotisserie chicken, leftover cooked chicken, pulled pork, or shredded beef for an even heartier dinner.
  • Serve with baked potatoes: Spoon the thick, smoky stew over baked russet or sweet potatoes. Finish with cheese, sour cream, or Greek yogurt.
  • Make it a taco night: Serve with warm corn or flour tortillas, shredded lettuce, diced onions, and your favorite taco toppings.
  • Bring it to a potluck: Keep the stew warm in a slow cooker on the warm setting and arrange rice, cheese, cilantro, and lime in separate bowls so everyone can build their own plate.
  • Meal prep for the week: Make a big batch and refrigerate the stew and rice separately. Reheat and add fresh toppings just before serving.
  • Stretch it for a crowd: Serve with rice, cornbread, or warm tortillas for an affordable, filling meal that easily feeds more people.

Tips

  • Don’t rush the onions: Cook them until soft and slightly sweet. This builds a flavorful base for the whole stew.
  • Toast the spices: Let the garlic, tomato paste, smoked paprika, cumin, and other spices cook in the olive oil for about 1 minute. Stir constantly to release their aromas without burning them.
  • Blend half a can of beans: This is the secret to a thick, velvety sauce without cream or flour. Leave the remaining beans whole for a satisfying texture.
  • Start with less broth: Begin with 1 cup and add more as needed. It’s much easier to thin a thick stew than to fix a watery one.
  • Adjust the heat to your taste: Start with ยผ teaspoon red pepper flakes for gentle warmth. Add more if you prefer a spicier stew.
  • Don’t skip the lime: Fresh lime juice balances the rich, smoky spices and makes the flavors pop. Add it at the end for the freshest taste.
  • Simmer gently: Canned black beans are already cooked, so 10 minutes is enough to heat them through and bring the flavors together. Avoid boiling vigorously.
  • Taste before serving: Black beans and tomatoes can need more salt than you expect. Adjust the salt, lime, and red pepper flakes until the flavors taste balanced.
  • Want a more traditional birria flavor? Replace the red pepper flakes with softened dried ancho or guajillo chilies. Blend them into the sauce for a deeper, fruitier chili flavor.

Frequently Asked Questions

What is birria, and how is this recipe different?

Birria is a traditional Mexican dish made with meat slow-cooked in a rich sauce of dried chilies, garlic, and spices. Our version replaces the meat with black beans and uses everyday pantry spices for a quicker, easier, birria-inspired stew.

Can I use dried black beans instead of canned?

Absolutely! You’ll need about 1ยฝ cups (300 g) dried black beans to make approximately 4ยฝ cups cooked beans.

Soak them in plenty of water overnight (8โ€“12 hours is best), then drain, rinse, and boil in fresh water for 60โ€“90 minutes, or until completely tender. Cooking time varies depending on the age of the beans.

Once cooked, drain them and follow the recipe as written, using ยฝ cup to blend into the sauce and the remaining 4 cups for the stew.

Can I add meat to this vegetarian black bean stew?

Yes! Stir in shredded rotisserie chicken, cooked ground beef, pulled pork, or leftover shredded meat during the final simmer. It’s an easy way to make the dish even heartier.

Can I make this recipe ahead of time?

Absolutely! The flavors develop beautifully overnight. Prepare the stew in advance, refrigerate it, and gently reheat with a splash of broth or water. Cook the rice and add fresh toppings when ready to serve.

How to store this smoky black bean stew?

Let it cool, then refrigerate in an airtight container for up to 4 days. Store the rice and toppings separately.
