This Mexican quinoa salad is BIG on flavor! Smoky roasted sweet potatoes, black beans, crunchy peppers, sweet corn, spicy jalapeños, and fluffy quinoa, all tossed in a punchy cilantro-lime dressing. 🌽 It’s not a traditional Mexican recipe, but my own creation inspired by Mexican flavors and ingredients.

It’s fresh and colorful, but still hearty enough to call dinner. Louise and I love the contrast here: warm, caramelized sweet potatoes against crisp vegetables, with that tangy-sweet lime dressing soaking into every bite.

And yes, it happens to be pretty darn nutritious too. 🌱 You’ve got fiber-rich beans, protein-rich quinoa, plenty of vegetables, and wholesome everyday ingredients that make this a feel-good meal without sacrificing flavor.

  • Black beans: add hearty texture and plant-based protein. Use canned black beans for convenience, or cook dried black beans from scratch. Substitute pinto beans, kidney beans, or chickpeas.
  • Red bell pepper: adds juicy crunch and sweetness. Substitute yellow, orange bell pepper, or cherry tomatoes.
  • Corn: canned, fresh, or frozen all work in this black bean quinoa salad. For extra flavor, use grilled or fire-roasted corn.
  • Red onion: adds sharpness and crunch. Substitute green onions or shallots.
  • Jalapeños: use pickled for tang or fresh for more heat. Substitute serrano peppers or mild green chiles.
  • Cilantro: makes the dressing bright and fresh. Substitute flat-leaf parsley if cilantro isn’t your thing.
  • Extra virgin olive oil: creates a rich, smooth dressing.
  • Lime juice: gives this quinoa sweet potato salad its fresh, tangy kick. Lemon works too.
  • Maple syrup: balances the lime and heat. Substitute honey or agave.
  • Garlic: adds savory bite. If garlic intolerant, simply omit it or use garlic-infused olive oil.
  • Fresh ginger: adds zing and warmth. Substitute a small pinch of ground ginger.
  • Salt and black pepper: bring all the flavors together.

How to Make Mexican Quinoa Salad

1. Roast the sweet potatoes

Preheat the oven to 400°F (200°C).

Peel and cut the sweet potatoes into 1-inch (2.5 cm) chunks. Toss with a drizzle of olive oil, smoked paprika, cumin, a good pinch of salt, and black pepper.

Spread in a single layer and roast for about 20 minutes, or until fork-tender and lightly browned.

For the air fryer, cook at 350°F (180°C) for 12 to 15 minutes, shaking once or twice.

If your quinoa isn’t cooked yet, prepare it now according to the package directions.

2. Make the dressing

Finely chop the cilantro and add it to a small bowl.

Add the olive oil, lime juice, maple syrup, grated garlic and ginger, salt, and black pepper. Whisk well until combined.

Alternatively, add everything to a small blender and blend until smooth.

3. Marinate the black beans

Drain and rinse the black beans, shaking off as much water as possible.

Add them straight to the dressing and toss well.

Set aside while you prep the remaining ingredients. This quick marinade gives the beans so much more flavor and makes a big difference in this quinoa and black bean salad.

4. Toss everything together

Chop the bell pepper and red onion, drain the corn, and prepare the jalapeños.

Add them to a large bowl with the cooked quinoa and roasted sweet potatoes. The sweet potatoes can still be warm.

Add the black beans and all their dressing, then toss gently until everything is evenly coated.

Taste and adjust with more salt or lime juice before serving.

For quinoa salad meal prep, make a little extra dressing to drizzle over later. The sweet potatoes soak it up like sponges as they sit.

Can I make this ahead?

Can I make it less spicy?

Freezing isn’t recommended because the fresh vegetables lose their crisp texture after thawing.

Ingredients 

Sweet Potatoes

  • pounds sweet potatoes peeled and chopped into 1-inch (2cm) chunks
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin

Salad

  • cup cooked quinoa or ½ cup (90 g) uncooked
  • 1 can black beans 15 oz / 400 g can – drained and rinsed – or 1½ cups / 230 g cooked beans
  • 1 cup red bell pepper
  • ½ cup corn canned, fresh, or frozen
  • ½ red onion chopped
  • ¼ cup jalapeños pickled or fresh

Dressing

  • ¾ cup cilantro use parsley if you don't like cilantro
  • 4 tablespoons extra virgin olive oil
  • 4 tablespoons lime juice
  • 2 tablespoons maple syrup
  • 1 clove garlic grated
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon salt + black pepper to taste

Instructions 

  • Roast the sweet potatoes: Preheat the oven to 400°F (200°C).
    Peel and cut 1½ pounds sweet potatoes into 1-inch (2.5 cm) chunks. Toss with about 1 tablespoon olive oil, 1 teaspoon smoked paprika, 1 teaspoon ground cumin, a good pinch of salt, and black pepper.
    Spread in a single layer and roast for 20 minutes, or until tender when pierced with a fork.
    If needed, cook the quinoa according to the package directions.

  • Make the dressing: Finely chop ¾ cup cilantro and add it to a small bowl with 4 tablespoons extra virgin olive oil, 4 tablespoons lime juice, 2 tablespoons maple syrup, 1 clove garlic (grated), 1 teaspoon fresh ginger (grated), 1 teaspoon salt, and black pepper.
    Whisk well to combine. You can also blend everything in a small blender.

  • Marinate the black beans: Drain and rinse 1 can black beans well, shaking off as much water as possible.
    Add them to the dressing, toss well, and set aside while you prepare the vegetables.

    Just the right amount of spicey and sweet with crunch from the corn and fresh jalapeños. I add Tajín for extra kick. Everyone I’ve served this to loves it!!
