- Cook the sweet potato: Poke 1 sweet potato a few times with a fork. Microwave until very soft, about 5โ7 minutes or until fork tender. Cut it open and scoop the soft inside into a large bowl.

I loved them- yummy and so healthy. I first made the recipe with lentils but this time I am going to try chick peas. Pan frying was taking too long (because I tripled the recipe and froze the extra) so I switched to air frying which worked just fine- couldn’t really tell the difference.

These patties are delicious and very easy to make. I used French lentils but I’m sure brown lentils would work fine. I always cook sweet potatoes in the crock pot because it’s so easy to do. I used paprika instead of cumin and will try smoked paprika next time.
