Spread about 2 tablespoons of hummus on the bottom slice of the focaccia bread.Top it with a few pieces of roasted pepper, 2 or 3 slices of grilled eggplant, and 3 or 4 slices of grilled zucchini. Season with a few drops of extra virgin olive oil, a pinch of salt, and black pepper.
Top with 2 slices of halloumi (you can grill it for one minute on each side if you like) and 2 tablespoons of pickled red onions.
Spread a thin layer of hummus on the other half of the focaccia, about 1 tablespoon. Then, top the sandwich and cut it into squares with a bread knife if necessary.
