This barley salad with roasted vegetables is the perfect grain salad for a picnic, potluck, or a healthy lunch.

STEP 1: Boil the barley, and roast veggies in the oven

STEP 2:  Cut the veggies into dice. Add to a bowl with the barley

STEP 3:  Add the basil leaves and parsley. Then mix well, taste, and adjust for salt, pepper.

Serve with a vinaigrette or your favorite dressing.
