Start the aromatics: Heat 2 tablespoons extra virgin olive oil in a large skillet over medium heat. Add 1 shallot (chopped) and cook for 3 to 4 minutes until soft.Stir in 2 cloves garlic (grated) and cook for about 30 seconds, until fragrant.
Add the beans and wine: Add 2 cans butter beans (rinsed), ½ teaspoon salt, and black pepper and cook for 2 minutes, stirring gently.Pour in ⅓ cup dry white wine and simmer for 2 to 3 minutes, until reduced by about half.
Make the piccata sauce: Add 1 cup vegetable broth and 3 tablespoons capers and simmer uncovered for 5 to 7 minutes.Add 2 packed cups baby spinach and cook for 1 to 2 minutes, stirring, until just wilted.
Make it creamy: Turn off the heat. Stir in 1 teaspoon lemon zest, 2 tablespoons lemon juice, and ½ cup Greek yogurt until the sauce is smooth and creamy.Taste and adjust with more lemon juice, salt, or black pepper if needed. Sprinkle with parsley and optional Parmesan, then serve warm with crusty bread, rice, or orzo.
