1½tablespoonsCajun seasoningstore-bought or homemade (see notes)
1½teaspoonssmoked paprika
3cansblack beans15 oz / 400 g each can - rinsed
3cups(750ml)vegetable brothpreferably low-sodium, plus more if needed
1bay leaf
¾teaspoonsaltadd more to taste
2tablespoonslime juiceor lemon juice - freshly squeezed
2green onionsthinly sliced, for serving or fresh cilantro
Cook the vegetables: Heat 2 tablespoons olive oil in a large pot over medium heat. Add 1 medium yellow onion, 2 ribs celery, and 1 medium green bell pepper (all chopped).Cook for 5 minutes, stirring occasionally, until the vegetables soften.
Add the seasonings: Stir in 3 cloves garlic (grated), 3 tablespoons tomato paste, 1½ tablespoons Cajun seasoning, and 1½ teaspoons smoked paprika.Cook for 1 minute, stirring often, until fragrant.
Simmer the soup: Add 3 cans black beans (rinsed), 3 cups vegetable broth, and 1 bay leaf. Stir well and bring to a gentle boil.Lower the heat and simmer uncovered for 15-20 minutes, stirring occasionally, until the beans are tender and the soup is flavorful.
Make it creamy: Remove the bay leaf. Use an immersion blender to blend about one-third of the soup, leaving plenty of whole beans for texture. If you don't have an immersion blender, mash some of the beans with a fork or potato masher.
Finish and serve: Stir in 2 tablespoons lime juice. Taste and add salt if needed. If the soup is too thick, add a splash of vegetable broth until you reach your preferred consistency.Serve warm with sliced green onions and your favorite toppings. It’s especially good with rice, crusty bread, or toasted tortillas.

Use low-sodium broth: Especially if your Cajun seasoning contains salt.
Adjust the thickness: Add a splash of broth or water when reheating.
Make ahead: Flavors develop as the soup sits. Great for meal prep and potlucks.
