These cannoli are made with vegan ricotta and are sweet and creamy inside. The shell is every bit as bubbly, light, and crisp as the traditional ones.

STEP 1: Make vegan ricotta w. soy milk and vinegar. Let it drain in a sift

STEP 2:  Add flour, sugar, cacao powder, cinnamon, vegan butter, and sweet wine,  mix well.

STEP 3:  Knead the dough and let it rest for 30 mins. Roll with a rolling pin on your worktop.

STEP 4:  Cut the dough into squares or circles, the same length as the cannoli tubes.

STEP 5:  Wrap dough around cannoli tubes and fry them one by one

STEP 5:  when the shell is light brown, take out of the oil, let drip the excess oil, and place on a cooling rack

STEP 6:  Now mix the vegan ricotta, sugar, dark chocolate chips, and a tiny bit of orange zest.

STEP 8:  Fill each cannoli with ricotta filling with a pastry piping bag

STEP 9:  Dip the ends in chocolate chips or crushed pistachio nut pieces. Serve immediately
