Sweet and sour eggplant is a delicious recipe made with simple ingredients on the stovetop in about 20 minutes.

STEP 1: Wash and dry the eggplant, cut it into slices, then into sticks.

STEP 2: To a skillet, add olive oilcrushed garlic, and eggplant. Cook 15 mins.

STEP 3: When the eggplant is cooked, add the sugar, vinegar, and finely chopped herbs.

STEP 4: Taste and adjust for salt and sweetness.

STEP 5: Serve and sprinkle with herbs and add some toasted pine nuts on top.

APPETIZER: Add the cooked eggplant to toasted bread
