Sauteed zucchini is the easiest and most versatile of all zucchini recipes because you can eat it on its own and as a side dish.

STEP 1: Wash, dry, and chop off the ends of the zucchini. Slice the zucchini into ⅕ inches (5 mm) thick discs.

STEP 2:  To a large skillet, add  olive oilcrushed garlic, and chopped onion.

STEP 3:  Fry on medium heat for 3 minutes. Add the zucchini, and season with saltpepper, and dried oregano.

STEP 4:  Cover with a lid and fry for another 2 minutes. Keep the lid on for only 2 minutes.

Taste and adjust for salt, then add some finely chopped parsley and a squeeze of fresh lemon juice.

Serve as a side with red pepper flakes

Or as a healthy addition to a creamy pasta.

We also love it next to tofu!
