Panzanella is an Italian bread salad
with simple
summer vegetables
and leftover stale bread soaked in water.

STEP
1
: Break up the
stale
bread
into big chunks and add them to a bowl. Cover with
water
and add
vinegar. Soak for 5-30 mins.

: With your hands,
squeeze the water out of the soaked bread
, crumble it into a large bowl.

STEP 3: Chop, cut and dice cucumber, onion and tomatoes
into a bowl.

vinegar

fresh basil
leaves.

well and
set aside 10 to 30 minutes
