Panzanella is an Italian bread salad with simple summer vegetables and leftover stale bread soaked in water.

STEP 1: Break up the stale bread into big chunks and add them to a bowl. Cover with water and add vinegar. Soak for 5-30 mins.

STEP 2: With your hands, squeeze the water out of the soaked bread, crumble it into a large bowl.

STEP 3: Chop, cut and dice cucumber, onion and tomatoes into a bowl.

STEP 4: Add squeezed breadsaltpepper, olive oilvinegar, and fresh basil leaves.

STEP 5: Mix the ingredients well and set aside 10 to 30 minutes before serving the Panzanella salad.

VARIATION: Add chopped romaine lettuce to make it even crunchier.

SERVE: with plant-based protein as a healthy dinner.
