Moroccan carrot salad is a delicious and aromatic recipe with tender boiled carrots, and a few other simple ingredients.

STEP 1: Peel the carrots with a vegetable peeler and chop them into small chunks.

STEP 2: Boil the carrot for 15 to 20 minutes or until tender.

STEP 3: Make the cumin-parsley dressing.

STEP 4: Whisk ingredients together, and set aside.

STEP 5:  Pour the dressing onto the hot carrots and stir gently.

STEP 6: Transfer onto a serving platter and sprinkle with toasted shaved almonds.

Make it a meal: Add cooked lentils to the carrots.

SERVE: as a side dish with your main dish.
