The eggplants are cut into round slices, roasted, and topped with a tasty tomato sauce and melty cheese. This recipe is a sure hit with picky adults and kids alike.

STEP 1: Wash and dry the eggplant, remove the stem, and cut it into ¼ inch (0.7cm) discs.

STEP 2: Arrange on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake 20 mins.

STEP 3:  To a bowl, add passata,  oregano, olive oil, garlicsalt, and pepper, and stir.

STEP 4: Apply pizza sauce on roasted eggplant. Sprinkle with a pinch or two of cheese.

STEP 5: Put back in the oven and broil for about 5 minutes, until the cheese is melty and starts to brown.

Serve immediately with fresh paper and sprigs of basil.

VARIATION with tomato mix
