Cauliflower curry
is a

FIRST
: Get your ingredients ready.

STEP 1:
Add oil
and
finely chopped onion
to a pot. Fry on low heat for
3 minutes
, add
grated garlic
and
ginger
and fry.

Toast the spices
on low heat,
while stirring, for about
1 minute
or until you can smell their fragrant aroma.

cauliflower florets
and
rinsed chickpeas
to the pot, and stir with the spices.

vegetable broth
,
crushed tomatoes
, and
salt
. Simmer for
15 minutes
with a lid on.

coconut milk
and simmer uncovered for
10 more minutes
