Our vegan carrot cake
is an easy-to-make,
one-layer cake
with simple ingredients you probably already have in your pantry.

: Peel, then
grate the carrots
with the
small holes
of a box grater. Set aside.

To a bowl, add the
flour
,
cinnamon
,
nutmeg
,
baking
powder
, and
salt
. Stir well and set aside.

: To a large bowl, add the
sugar
,
milk
,
oil
,
vanilla
extract
, and grated
ginger.
Stir well.

: Add the
dry ingredients
to the bowl with the
wet ingredients
and stir with a spoon until just combined.
Don't overmix.

: Add the
grated
carrots
,
chopped
walnuts
, and
raisins
, and stir to combine. Don't overmix. The batter should be thick.

: Transfer to the
cake pan
and bake in the oven at 340°F or 170°C for
40 to 45 minutes,
or until a toothpick inserted in the center comes out dry.

completely
- about 3 hours - before frosting it or eating it.
