Our vegan carrot cake is an easy-to-make, one-layer cake with simple ingredients you probably already have in your pantry.

STEP 1: Peel, then grate the carrots with the small holes of a box grater. Set aside.

STEP 2: To a bowl, add the flour, cinnamon, nutmeg, baking powder, and salt. Stir well and set aside.

STEP 3: To a large bowl, add the sugar, milk, oil, vanilla extract, and grated ginger. Stir well.

STEP 4: Add the dry ingredients to the bowl with the wet ingredients and stir with a spoon until just combined. Don't overmix.

STEP 5: Add the grated carrots, chopped walnuts, and raisins, and stir to combine. Don't overmix. The batter should be thick.

STEP 6: Transfer to the cake pan and bake in the oven at 340°F or 170°C for 40 to 45 minutes, or until a toothpick inserted in the center comes out dry.

Let it cool down completely - about 3 hours - before frosting it or eating it.

STEP 7: Apply frosting on top of the carrot cake, slice with a bread knife and enjoy.

It's packed with flavor, with just the right amount of moistness. Unlike most carrot cake recipes, ours does not contain a ton of sugar or oil.
