CARAMELIZED ONIONS

Caramelized onions have a full flavor with sweet and sour notes. They are soft and melt in your mouth; they are a delicious addition to starters, soups, dips, salads, pasta, and sandwiches.

STEP 1: Cut the onions in half, peel them, and cut them into ⅕ inch or ½ cm slices.

STEP 2: Cook the onions in oil on medium high heat for 5 minutes, stirring often and separating the onion layers.

STEP 3: Add salt and sugar.

STEP 4: Add the water and simmer on medium low heat for about 40 minutes until the onions are completely soft and shiny, and the water has evaporated.

STEP 5: Stir occasionally so that the onions cook evenly and don't stick to the pan.

STEP 6: Turn the heat to medium-high, then when the pan is hot add the vinegar. Stir constantly for 3 minutes to mix the onions with the vinegar, scraping all the brown bits from the pan.

Taste and adjust for salt before serving.

VARIATION: Use the same recipe for red onions.
