VEGAN SILKY PEANUT BUTTER TOFU WITH BLACK RICE COOKED IN COCONUT MILK

For coconut rice
300grams(1.6cups)black ricealso wild or whole grain
450ml(1.8cups)water
100ml(7tbsp)coconut milk
For tofu marinade
400grams(1.6cups)firm tofu
4tbsp(4tbsp)soy sauceor tamari sauce
1clove(1clove)garlicgrated
1tbsp(1tbsp)rice vinegar
2cm(1cm)gingergrated
½tsp(½tsp)chili flakesto taste
For silky peanut sauce
70grams(2.5oz)peanut buttersmooth, salted
1tbsp(1tbsp)agave syrup
2tbspsoy sauceor tamari sauce
150ml(9tbsp)coconut milk
1tsp(0.4inch)ginger powderor grated fresh ginger
½(½)lime squeezed
For sides and garnish
300grams(5.5cups)broccolisteamed or lightly boiled
6sprigs(6sprigs)coriander
1(1)scallionoptional
For coconut rice
In a pot, mix water and coconut milk and bring to boil.
Add rice and let boil on low heat for 25 mins or until rice is ready and water has evaporated. Set aside.
For tofu marinade
Cut tofu into small cubes, then press them with a kitchen towel to drain the excess water. Set aside, covered with a clean kitchen cloth, and with some weight on them to drain some more water.
In a bowl, whisk soy sauce, rice vinegar, garlic, ginger, chili flakes.
On a baking tray, place the tofu cubes after having dipped them in the marinade.
Bake for 20/30 mins on 180˚C (360 ˚F) or until golden and crisp. Set aside.
For silky peanut sauce
In a bowl, mix peanut putter, soy sauce, agave syrup, ginger and coconut milk and whisk well. When all liquid incorporated transfer into a pan and warm up gently. If to thick, add some more coconut milk to the sauce.
Add in the baked tofu cubes and fold them into the peanut sauce. Cook on low heat for 2 to 3 minutes, or until the tofu is fully coated with the peanut sauce.
For building the dish
Boil or steam broccoli florets for 2 to 3 minutes.
In a bowl, arrange broccoli and black rice, half half. Top with the peanut butter tofu and sprinkle with coriander and/or spring onion.
Squeeze fresh lime for freshness. Add some crushed peanuts for extra crunch and enjoy :-)
