Tofu marinade
Grate the garlic and ginger into fine pieces, we want to reduce these into a paste for maximum flavour.
Optional: to obtain a smoother texture put garlic and ginger into a mortar and work them till smooth.
Add red curry paste and mix in a bowl.
Add water, soy sauce, rice vinegar, Worcestershire sauce and agave syrup to the mix and whisk well.
Peanut satay sauce
Mix peanut butter, soy sauce, agave syrup, lime juice, chili powder, garlic powder and water into a bowl. Whisk until smooth.
Marinade the Tofu
Cut tofu into bite-size dice and place them between a clean cloth to remove moisture.
Press gently over the cloth to squeeze the tofu gently to remove as much water from the tofu as you can.
Once squeezed, dip each cube into the marinade and place them on a baking tray with parchment paper or silicon baking mat.
Repeat till all tofu cubes have been dipped in the marinade.
If you have leftover marinade, distribute with a spoon across the tofu cubes - the more marinade, the merrier.
Bake for 20 mins at 180˚C degrees (360˚F).
Build the skewers
While the tofu bakes, rinse and cut the vegetables into dice, approximately of the same dimensions as the tofu.
Take the tofu out of the oven and start building your skewers alternating the vegetables and the tofu.
Place the skewers on a baking tray and grill or bake for about 15 min.
Once cooked, drizzle some peanut satay sauce on top and enjoy :-)
