This is an easy recipe, and with our step-by-step instructions, you'll learn how to make risotto like an Italian.

STEP 1: Finely chop the shallot. Grate the zucchini with the large holes of a box grater.

STEP 2:  To a large skillet, add olive oil and the finely chopped shallot. Fry on low heat for about a minute.

STEP 3:  Add the risotto rice to the pan. Turn the heat up to medium and stir the rice around the pan with a wooden spoon.

STEP 4: Add the white wine and stir continuously until the wine has completely evaporated.

STEP 5: Add broth, zucchini and stir.

STEP 6: Stir slowly and continuously, until the rice is cooked. This will take 15 to 18 minutes.

STEP 7: Turn the heat off and add the butter and parmesan cheese.

STEP 8: Serve after 2 min cool down, and eat with a fork.

A perfect easy and veggie-packed dinner.
