Focaccia with zucchini is a great way to enjoy this summer vegetable differently. Crunchy and refreshing!

STEP 1: Make the dough, and let it proof overnight or for 2 hours.

STEP 2: on top of the dough, thinly slice the zucchini with a vegetable peeler.

STEP 3:  Season with a few pinches of salt, black pepper, and extra virgin olive oil.

STEP 4: bake it for about 18 to 25 minutes.

Let it cool down for 5 mins before removing it from the pan

Enjoy as a light summer dinner with friends and family.
