This vegan sour cream is easy to make with cashews, water, lemon juice, apple cider vinegar, and salt.

STEP 1: Soak the cashews with hot water for about 1 hour.

STEP 2:  Drain and rinse the nuts and add them to a blender with wet ingredients.

STEP 3:  Blend at high speed until silky smooth. It might take from 3 to 7 minutes.

Sprinkle with chives before serving.

Perfect with soups, potatoes and Mexican dishes.

It complements roasted and stuffed veggies well.

And it's great on a sweet potato chili.

Store it in the fridge for up to 5 days in an airtight container.
