VEGAN PANCAKES

Soft, tall, fluffy, and easy to make, these vegan pancakes are the best pancakes you'll ever have.

STEP 1: In a bowl, mix together the flour, sugar, salt, and baking powder.

STEP 2: Add the milk, water, and vanilla to the bowl with the dry ingredients. Whisk gently just until the wet and dry ingredients come together, without overmixing.

STEP 3: Lightly oil the pan, then cook the pancakes on low heat for about 1.5 minutes on one side, then turn them gently and cook for another 1 minute on the other side.

STEP 4: Tip: when cooking pancakes, the pan should be hot but the heat very low.

Remove from the pan and serve with vegan butter and maple syrup (and optionally some fresh berries).

It's a delicious and airy brunch and breakfast idea.

If you store them in the refrigerator, you can stack them on top of each other, put them in a bowl and cover them with a plate. Reheat in the microwave for just a minute.
