This vegan lemon cake is soft, light, moist, and incredibly easy to make, with a few simple ingredients that you probably already have in your pantry.

STEP 1: To a large mixing bowl, add the grated lemon zest and lemon juice.

STEP 2:  – Add plant milk, sugar, oil, vanilla extract and mix well with a whisk.

STEP 3:  Sift in flour and baking powder, mix well and transfer to a cake pan.

STEP 4:  Bake immediately at 340F or 180C for 35 minutes. Let cool down and cut in half.

STEP 5:  You can eat the cake as is or you can fill it with our lemon-vanilla custard.

STEP 6:  Spread custard inside and add the top part. Sprinkle with powdered sugar.

A fresh and light cake: perfect for celebrations and Sunday afternoons!
