A quick, and fulfilling vegan lunch, you need to try this vegan egg salad. Made with tofu, vegan mayo, and herbs, it’s great in a sandwich.

STEP 1: To a medium mixing bowl add all ingredients except the tofu

STEP 2:  Stir with a spoon till the ingredients are well combined.

STEP 3:  Cut firm tofu into small dice (¼ inch, 0.6 cm).

STEP 4:  Transfer the tofu into the mixing bowl with the dressing

STEP 5:  Serve in a bowl, on a toast or in a sandwich.

Or as a vegan appetizer on cucumber slices.
