Here's a delicious vegan curry recipe with a fragrant and creamy sauce, chewy tofu, and roasted cauliflower.

Bake tofu and cauliflower florets for 30 minutes.

In the meantime, toast onion, garlic, ginger and spices in a skillet.

Add red bell pepper, vegetable broth, canned tomato and coconut milk.
