Chickpea flour (garbanzo bean flour) Water Olive oil  Salt Pepper Zucchini  Red onion Salt and pepper to taste

Ingredients

make the batter

1

mix chickpea flour, water, oil, salt and pepper

make filling

chop red onion and slice zucchini. cook on a pat with little oil

mix filling in batter

once zucchini and onion is soft, mix in the batter. transfer to a pan and cook on low heat

cook until golden

once cooked, transfer to a plate and let cool down

You can also bake the frittata in the oven and avoid the oil on the pan. Transfer to a small baking tray and bake for 15-20 mins on 360F/180C.
