Soy milk White vinegar Salt Cheese cloth Ricotta cheese mold (optional)
Pour milk into a large pot and heat until boiling. Stir frequently.
Add white vinegar or lemon juice and watch the milk curdle. Use a porcelain spoon as silver creates a chemic reaction.
After 10 minutes, pour through sieve and cheese cloth. Let drain for 1 hour
After 1 hour, it should look like this - cheesy, ricotta texture.
Transfer into ricotta mold or bowl and eat on bread, in sweets or in pastas.
The ricotta needs an hour for draining, this creates the best texture.
Style with oil, salt, your favourite nuts and some sprigs of basil.
