Tahini salad is a healthy and tasty dish with fresh vegetables and herbs such as tomatoes, lettuce, and parsley tossed in a creamy tahini sauce.

STEP 1: Chop the vegetables and add them to a large bowl.

STEP 2: Make tahini dressing. Drizzle the tahini sauce on the salad and toss until the vegetables are coated.

STEP 3:  Taste and adjust for salt and lemon juice.

STEP 4:  Optionally, add drained and rinsed canned chickpeas, crispy oven-roasted chickpeas, or crispy air-fryer chickpeas (recommended).

The chickpeas provide plant-based protein and additional fibre to the salad.

Garnish with a pinch of dried oregano, sumac, or za'atar.

SERVING SUGGESTION: with falafel on top

Drizzle with tahini sauce and sprinkle with sesame seeds.
