Sweet potato soup is a fall-inspired recipe that is creamy, earthy, a little sweet, and perfect for autumn or winter weeknight dinners.

STEP 1: Get your ingredients ready.

STEP 2: Roast sweet potatoescarrots, and onion for 20 minutes.

STEP 3: Add the baked veggies, including garlic and onion, to a dutch oven. Add ginger, cumin, and half the vegetable broth.

STEP 4: Blend with immersion blender. Add the coconut milk, stir, and cook for 5 minutes.

STEP 5: Taste the soup and adjust, adding more salt, broth, pepper, ginger, or cumin as desired.

STEP 6: Top it with our homemade croutons (also air-fried), red pepper flakes, and chopped parsley.

A healthy and veggie-packed starter or dinner.
