Roasted sweet potato salad with ripe avocado, arugula, creamy mustard dressing, and a tiny bit of feta cheese is a nutritious meal.

STEP 1: Peel and chop the sweet potatoes into 1-inch cubes. Roast for 25 minutes.

STEP 2: Mix arugulaavocadored onionwalnuts, dried cranberries, and pumpkin seeds.

STEP 3: Pour the mustard dressing, toss, and serve.

VARIATION: Crumble feta on top (we use dairy-free)

VARIATION: add corn and black beans.

VARIATION: Moroccan salad w. lentils
