A nutritious, tasty, and aromatic salad, tanks to a simple cumin and paprika dressing inspired by Moroccan cuisine.

STEP 1: Peel and chop the sweet potatoes into 1-inch cubes. Roast for 25 minutes.

STEP 2: Add the roasted sweet potatoes, drained canned lentilschopped parsley, and the cumin dressing.

STEP 3: Toss well, sprinkle with pistachios and fresh parsley.

VARIATION: Crumble feta on top (we use dairy-free)
