Crispy smashed potatoes are a finger-liking delicious potato appetizer, side dish, or snack for a fun everyday dinner or a special meal.

STEP 1: Bring the water to a boil and cook for 20 to 30 minutes, or until fork tender.

STEP 2: Drain potatoes and let them cool for 5 minutes to allow excess moisture to go.

STEP 3: Smash them with a sturdy fork or potato masher and arrange them onto the baking tray, on a single layer, without touching.

STEP 4: Season each potato with saltpepper, and a drizzle of olive oil, and let them sit for 5 minutes to allow excess moisture to escape..

STEP 5: Bake at 400°F or 200°C for 30 to 40 minutes, until the potatoes, are golden-brown and crisp up on top and around the edges.

SERVE as a Side dish: sprinkle with parsley, chives, dill, or cilantro.

Appetizer: drizzle with chimichurri and/or fresh tomato salsa.

Snack: load them up with salsa and sour cream.
