Crispy risotto cakes are a tasty and fulfilling main dish you can make with leftover risotto and a few other simple ingredients.

STEP 1: Got leftover risotto? skip to Step 2. Get risotto recipe by clicking LINK

STEP 2: To a bowl, add the plant milk. In a separate container, mix breadcrumbs with saltpepper, and herbs.

STEP 3: Take a tablespoon of risotto into your hand, shape it into a cake, dip in milk, then roll in the breadcrumbs mix.

STEP 4: Repeat until you run out of risotto, arranging the cakes on a platter.

STEP 5: Pan-fry the rice cakes. See instructions + tips on our blog.

STEP 6: After 5 mins, remove cakes from the pan and place on paper towels to absorb excess oil

STEP 7: Reduce your oil consumption by air frying rice cakes instead. Air fry for 13-15 mins.

SERVE: with marinara sauce as an appetizer.

TIP: try making rice balls with risotto leftovers. A perfect appetizer!
