This easy rice salad is adapted from the Italian rice salad and it's the perfect summer dish, easy to prepare in advance, and bring with you for a picnic outdoors.

STEP 1: Prep your ingredients and boil the rice. Set aside and prep the zucchini for baking

STEP 2:  Slice the zucchini into thick slices, season with salt and olive oil, roast in the oven for 20 minutes with a whole bell pepper

STEP 3:  Move rice to a large oven dish and add lemon juice while mixing it in with a spoon.

STEP 4:  Fry tofu and chickpeas on a pan with Italian herbs. Chop salad and tomatoes

STEP 5:  Mix everything, add olives and chop fresh parsley.

Serve with lemon vinaigrette and fresh parsley

A perfect easy salad for lunch, dinner and on the go.
