Prep your ingredients
and boil the rice. Set aside and prep the zucchini for baking

Slice the zucchini into thick slices, season with
salt
and
olive
oil
, roast in the oven for
20 minutes with a whole bell pepper

Move rice
to a
large oven dish
and add lemon juice while mixing it in with a spoon.

Fry tofu and chickpeas on a pan with Italian herbs. Chop salad and tomatoes
