This red lentil soup is a tasty, earthy, and wholesome dish that is naturally plant-based and ready in just 30 minutes.

FIRST: Get your ingredients ready.

STEP 1: In a large pot, warm up the olive oil, add the chopped veggies, and gently fry them on medium heat for 3 minutes. Stir often.

STEP 2: Add grated garliccumin seedsred pepper flakesrosemary, and bay leaves, and fry gently for another 2 minutes.

STEP 3: Add rinsed red lentilscanned tomatoes, and vegetable broth, then season with salt and black pepper.

STEP 4: Bring to a boil on high heat, then lower the heat to medium and simmer for about 20 minutes or until the lentils are cooked.

STEP 5: Our favorite way of serving this soup is in bowls with thick slices of toasted or grilled crusty bread.

You can also add freshly squeezed lemon juicechopped parsley, and freshly ground black pepper.
