This recipe is easy to make, and you can serve it as a starter or a side with Mediterranean dishes such as hummus and eggplant dip.

STEP 1: Get your ingredients ready.

STEP 2: Finely chop parsley and mint together.

STEP 3: Chop tomatoes into small dice of about ⅕ inch each. We recommend using a serrated knife or a sharp chef's knife.

STEP 4: Trim the green part off the green onions and finely chop the white part.

STEP 5: Add all  ingredients and drained lentils to a bowl, season with olive oillemon juicesalt, and pepper.

STEP 6: Toss well until the parsley, and the lentils are evenly combined.

Serve in the same bowl or on a serving platter as a healthy side dish.
