One of our favorite lentil recipes: easy to make, great for meal-prep, and it’s full of flavor.

STEP 1: Gently fry chopped onion for 3 minutes, then add grated garlic and grated ginger

STEP 2:  add the spices and toast while stirring on low heat for a short minute.

STEP 3:  Add vegetable stock, red lentils, crushed tomatoes, salt, stir and cook for about 20 mins.

STEP 5:  Add the coconut milk, stir well, and finish cooking for another 10 to 15 minutes

STEP 6:  Cook till the curry is thicker and creamier, and the red lentils are fully cooked.

STEP 7:  Serve with white rice, cauliflower rice, or naan bread. Squeeze fresh lemon and sprinke cilantro.

STEP 8: final touch is a dollop of yogurt on top.

A perfect easy and aromatic dinner with wholesome spices.
