Italian salsa verde is an easy and versatile sauce you can use to drizzle on boiled, grilled, and roasted vegetables and on many other foods.

STEP 1: The first step is to peel and cut the garlic lengthwise and remove its core if any.

STEP 2:  To a food processor, add  garlic, the zest of the lemon, lemon juice, capers, olive oil, salt, and parsley

STEP 3:  Pulse a few times until the ingredients are finely chopped and turn into a salsa verde.

STEP 4:  Serve on your favorite veggies; roasted, steamed and baked

With fresh veggies: it works well as a flavor enhancer

Brush on veggies: for a "full" flavor experience

And a refreshing condiment for vegan salads too!
